do you recognize this rice?

Let's ignore silly California for a minute and talk about what I had for dinner, which was this: SANY0417

I made shrimp scampi and a fabulous knockoff of Chipotle's lime rice. I copied the recipe down from online -- it really it tastes just like it. It's super delicious!


Ingredients
[serves two]
1 cup water
2 teaspoons fresh cilantro
2/3 cup white basmati rice [must be basmati or it will be sticky]
1 lime
1 teaspoon vegetable oil or butter
1/2 teaspoon salt

STEP ONE: In a heavy saucepan, heat oil/butter over low heat until melted or warm.
STEP TWO: Add lime juice and rice, stir for one minute.
STEP THREE: Add water and salt, bring to a full boil.
STEP FOUR: Cover and simmer on low until rice is tender and the liquid is absorbed. [25 Minutes.]
STEP FIVE: Add chopped cilantro and fluff rice with a fork.

It's yummy! You'll have to tell me how you like it. I would post the recipe for the shrimp but I think scampi's pretty standard.

Dude you so need to make this. I wish I had made more. I didn't know how much this would wield at first. I suppose if you're a bird you could get more than two servings out of it. That's my plate (with one bite taken out of it lol) and mom had a similar portion on her plate and that's all we got out of that recipe.
